  • 3 cloves garlic minced

  • 1 shallot minced

  • 1 can minced clams reserve

  • 1/4 cup of clam juice

  • 3/4 cup dried Italian bread crumbs

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons chopped parsley

  • kosher salt to taste

  • 15 - 20 large button mushrooms (wash and then remove stems and chop them up)


Preparation:

  1. Preheat oven to 350°F.

  2. In a small skillet, heat olive oil. Add chopped mushroom stems, shallots and garlic and sauté them until soft, 2-3 minutes. Remove from heat.

  3. In a bowl combine sauté shallot mixture, chopped clams, clam juice, bread crumbs, Parmesan cheese, dried oregano, parsley and salt.

  4. Spoon about 1-2 tablespoons of the mixture into each mushroom. Place the mushrooms in a baking dish. Drizzle with a little olive oil. Bake 15 minutes. Then turn on the broiler and broil for 2-3 minute or until the tops turn golden. Garnish with your favorite greens.




Mini Meatballs

Mini meatballs are a versatile option that can be served with various sauces. You can make them with beef, turkey, or even vegetarian alternatives. Here’s a basic recipe:


Ingredients:

  • 1 lb ground beef (85/20 fat content)

  • 1 lb ground pork (90/10 fat content)

  • ¾ cup Panko breadcrumbs substitute with normal breadcrumbs

  • 2 tsp Italian herbs substitute with a combination of the followings dried herbs, oregano, thyme and parsley or herb de Provence.

  • ½ cup milk I used semi skimmed milk

  • 2 eggs

  • ½ cup onion finely chopped or grated.

  • 2 large garlic minced

  • 2 tbsp Worcestershire sauce

  • salt and pepper to taste


Preparation:

  1. Preheat the oven to 400°F. Spray a non-stick baking sheet with cooking oil spray and set aside.

  2. In a large mixing bowl, add meats, breadcrumbs, egg, Italian herbs, minced garlic, chopped onions, worcestershire sauce, salt, and pepper. Pour milk all over the ingredients. Glove up and use your hands to gently combine the ingredients until it all comes together.

  3. Using a tablespoon or a ice cream scooper and scoop up some and roll into a small ball, a little less than the size of a ping pong ball and set on the baking sheet.

  4. Bake for 15 to 20 minutes or until golden brown. Remove from the oven and place them into a serving bowl. Toss or serve with a dipping sauce of choice (sweet and sour glaze or marinara sauce) and Enjoy!

Caprese Skewers

Caprese skewers are a fresh and visually appealing appetizer, that are super easy to assemble to add to any gathering.


Ingredients

  • 12 mozzarella balls (Ciliegine), , drained and patted dry

  • 24 small cherry tomatoes

  • 24 small fresh basil or spinach leaves

  • 1/4 cup balsamic glaze*

  • 12 (4-inch) party skewers


Assembly: Thread a tomato, basil leaf, mozzarella ball, basil leaf, and tomato onto a skewer. Drizzle with balsamic glaze before serving.


*Balsamic glaze is fairly common in grocery stores, but if you can’t find it, it’s really easy to make. Add one cup of balsamic vinegar to a small saucepan over medium heat. Once it comes to a boil, set on simmer for about 10-15 minutes until it reduces to a syrup consistency. You can check by dipping a spoon in the balsamic and if it covers the back of it, it’s done. As it cools, it will thicken a bit more. Allow to cool completely before using.




Spinach and Artichoke Dip

This creamy dip is a hit at any party. Serve it warm with sliced baguettes or  tortilla chips. Here’s a quick recipe:


Ingredients:

  • 14 ounces artichoke hearts drained and chopped

  • 10 ounces frozen chopped spinach thawed and drained

  • 1 cup sour cream

  • 1/4 cup mayonnaise

  • 8 ounces cream cheese softened

  • 1/4 cup Parmesan cheese grated

  • 1/2 cup mozzarella cheese grated

  • 2 garlic cloves minced

  • 1/2 tablespoon Worcestershire sauce

  • 1 teaspoon salt

  • 1/4 teaspoon black pepper


Preparation:

  1. Preheat the oven to 325°F.

  2. Blend together the sour cream, mayonnaise, and cream cheese. Mix in the artichokes, spinach, cheeses, worcestershire sauce, garlic, salt, pepper, and cayenne pepper. Taste and add more salt and pepper to taste.

  3. Pour into a baking dish and cover. Bake for 25-30 minutes. Serve with bagel chips, pita chips, vegetables, etc.

  • 1/2 cup ketchup

  • 1/2 cup salsa style tomatoes (I use Walmart's Fire Roasted Tomato Salsa)

  • 2 tablespoons Cholula


Preparation:

  1. In a large bowl combine shrimp, onion, celery, cucumber, tomato, avocado and jalapeno. Squeeze limes over the top and stir gently to coat.

  2. In a small bowl, whisk or stir together ketchup, salsa-style tomatoes, and hot sauce. Gently stir sauce and cilantro into the shrimp mixture. Season with salt and black pepper to taste. Chill for at least an hour. Spoon shrimp into a cocktail glass and garnish with a lime wedge.
